Here is a great paleo pumpkin muffin recipe. This recipe does not contain grains and uses coconut flour unlike traditional flour.   • 5 Whole Eggs
  • 1 cup of pumpkin puree
  • ¼ cup coconut oil – melted
  • ½ cup coconut flour

  • 1-2 tablespoons pumpkin pie spice or cinnamon (be generous and pumpkin pie spice works better than plain cinnamon)
  • ¼ cup honey


  • Preheat oven to 400 degrees
  • Put all the ingredients in a bowl
  • Stir – the batter should be thick
  • Put about 1/4 c of dough on the donut liners in a muffin pan.
  • Bake 13-18 minutes until light brown and lay in the middle
  • Optional – add some dark chocolate chips.
